Description
500g Whole Wheat
Whole wheat contributes to the wine’s body. The proteins bind with tannins, creating a smoother texture, while lipids add a creamy richness.
Fermentation Dynamics: During fermentation, components from whole wheat interact with grape compounds, influencing the wine’s structure and contributing to a more robust body.
Complexity and Depth: The use of whole wheat introduces additional layers of complexity to the wine, enhancing the overall sensory experience and contributing to a fuller body perception.
Balancing Act: Winemakers must carefully balance the incorporation of whole wheat to avoid overpowering other flavours, ensuring a harmonious integration for a well-rounded and balanced wine.
How to use it
Prepare the Whole Wheat:
Rinse the whole wheat grains thoroughly to remove any impurities.
Soak the grains in water for a few hours or overnight to soften them.
incorporate Whole Wheat:
Add the soaked and softened whole wheat grains directly to the fermenter.
If you prefer, tie the whole wheat grains in cheesecloth or muslin and place the bundle in the fermenter. This makes it easier to remove the solids later.
Remove Whole Wheat
After achieving the desired body, remove the whole wheat. If using a cloth bundle, simply take it out. If added directly, use a siphon or strainer to separate the liquid from the solids.
Continue Fermentation:
Allow the wine to continue fermentation until it reaches the desired level of dryness or sweetness.
Do not crush, wash, and use whole.
