What is it?

Dark Rock Tribute to Old Speckled Hen is a delicious premium bitter. It has a full, smooth easy drinking flavour. Its rich amber colour and superb fruity aromas are complemented by a delicious blend of malty tastes. Toffee and roast malt flavours combine with a subtle bitterness to give a balanced sweetness. The finish is refreshingly dry. This kit produces 40 pints at 4.4% ABV.

Tribute Series

The Commercial Brewery

Old Speckled Hen is produced by the Greene King Brewery, which was founded by Benjamin Greene in Bury St Edmunds in 1799. In 1836 Edward Greene took over the business and in 1887 it merged with Frederick William King's brewing business to create Greene King. Greene King has grown over the years via mergers and acquisitions. It's portfolio of businesses now includes Rayments Brewery (1961), the Magic Pub Company (1996), Hungry Horse Pub Restaurants(1996), Morland Brewery (1999), Old English Inns (2001), Morrells Brewery (2002),  a large part of the Laurel Pub Company (2004), Ridleys Brewery (2005), Belhaven Brewery (2005), Hardys and Hansons (2006), The Loch Fyne fish restaurant chain (2007), Cloverleaf (2011), Realpubs (2011), the Capital Pub Company (2011) and the Spirit Pub Company (2015).

All ingredients are bought and stored fresh and weighed into individual bags. Our hops are vacuum packed in nitrogen-flushed foil bags to produce the maximum flavour and aromas.

Equipment Needed

Tips

A sachet of Pure Brew is included with this kit to achieve a commercial quality. Pure Brew is a professional beer enhancer. It feeds the yeast with essential nutrients, which supercharge the fermentation and support yeast development (even in limited oxygen conditions). Pure Brew also treats brewing water to eliminate problems caused by Chlorine and Chloramine (which can create a medicinal or as it is sometimes referred to, a "homebrew" taste) The condition of brewing water is critical to achieving optimum results but this important area is often overlooked. By using Pure Brew, you can effectively and easily condition brewing water, and maximise effective fermentation. We strongly recommend using Pure Brew with all of your beers to improve their quality.

The addition of beer finings will improve the final quality of your beers. Starbrite finings is included with this kit. They will help your beer to clear quickly and the sediment will be more likely to stay at the bottom of bottles or barrels. If you are using Corny Kegs then it is important to clear the beer as much as possible before kegging. Beer Finings will promote a faster and more efficient fall out of sediment and haze particles before kegging. Harris Starbrite is a highly effective vegan-friendly beer fining, which is rapidly becoming a firm favourite with craft brewers. It is suitable for all beers.

A muslin grain bag is included with this kit. You could consider investing in a metal hop spider to upgrade your equipment. The hop spider would sit inside your boiling pan and allow you to drop hops into the pan in a controlled way. Hop Spiders allow hops to boil with more free-flow space around them. They are easily cleaned and can be reused over and over again.

Each Dark Rock kit is carefully researched and developed by commercial brewers with extensive knowledge and a passion for craft beers and real ales. New styles are always pilot tested by craft brewers before being released into the market. Dark Rock Kits enable you to produce commercial quality beers, all within the comfort of your own home. Malts and hops are added at controlled stages of the brewing process to provide rich aromas and depths of flavour, which are simply not possible from standard hopped malt extract kits. This is the reason many brewers are moving from malt extract kits to part grain kits. It is difficult to distinguish Dark Rock part grain beers from all-grain ales, and the brewing process is much faster and less complicated.

Did the Pepsi challenge with two friends. Between the three of us we could hardly tell the difference to the shop bought. I found the commercial bottle a little dryer, but all agreed the kit version was the better of the two. Colour wise my brew was a lot darker but who cares !. Was really surprised how close it is to the real thing, almost exact.

Great tasting beer!
As a fan of old speckled hen had to try this and I’m very glad I did, the beer is a lovely colour quiet malty with a lovely taste which goes down very well! The keg is nearly empty but have a few bottles in reserve, highly recommend.

It has a real malty / toffee flavour and is smooth to drink, . 'Clucking' good beer.
I like the Real Speckled Hen beer so I thought I would give this tribute to Hen a try. I have to say that once the brew was completed and matured I was conveniently furloughed so had plenty of time in the garden to drink my Brew. It has a real malty / toffee flavour and is smooth to drink, . 'Clucking' good beer.

I have to say that once the brew was completed and matured I was conveniently furloughed so had plenty of time in the garden to drink my Brew. It has a real malty / toffee flavour and is smooth to drink, . 'Clucking' good beer.
