Starch in Wine

In winemaking, starch is a complex carbohydrate found in fruits, grains, and some additives. Yeast cannot ferment starch directly—it can only ferment simple sugars such as glucose and fructose. If starch is present in a wine or country wine, it can cause cloudiness or haze that doesn’t clear naturally. Starch can get into wine from apples, pears, bananas, and other fruits that aren’t fully ripe; Using fruit pulp or purees that contain starchy material; ingredients such as rice, wheat, or potatoes in country wine recipes and certain commercial juice products that contain added starch or thickeners.

To test for starch in your wine, add a few drops of the Starch test Reagent to a sample of the wine or must. If it turns blue-black, starch is present. If there is no colour change, little or no starch remains.

Starch in Beer

Unlike grapes, which contain fermentable sugars naturally, malted grains used in brewing contain mostly starch, which must be converted into sugar during mashing. The basic process is malted barley contains starch. During the mash, enzymes in the malt become active and these enzymes break the starch into fermentable sugars. Yeast ferments those sugars into alcohol and CO₂

Residual starch can cause permanent haze or cloudiness; a thick, grainy mouthfeel; lower alcohol than expected and potential stability issues. Commercial breweries aim for complete starch conversion before boiling.

To test for starch in your beer place a drop of wort on a white plate and add a few drops of the Starch Test Reagent. If it turns blue-black, starch is still present, If it stays brown/yellow, conversion is complete.

Only all-grain brewers need to worry about starch conversion during mashing.
