Top Shelf Port Ruby Flavouring
Nothing tops off a good meal – especially a Christmas dinner- better than a glass of port to warm your insides.
This bottle of flavour makes 3 x 750ml bottles of port. However, with this flavour, you will need a pack of Base B and a bottle of red wine (preferably Merlot).
Dissolve a pack of Base B in 1 bottle of red wine (Merlot will give a better result). Add the bottle and 770ml of 40% abv spirit. Mix then top up to 2.25 litres with water. Mix thoroughly.

This makes a Ruby style Port with a velvety texture.

What Type Of Spirit To Use.
The best spirit to flavour will be a neutral one, like vodka. A higher quality vodka will not have the same harshness as a cheaper vodka. Alternatively, you can make your own neutral spirit to flavour – this will certainly be the cheapest option and also the most rewarding.
EQUIPMENT NEEDED TO DISTIL YOUR OWN SPIRIT
The equipment required to make a spirit includes basic brewing equipment, which can be found in the ‘Starter kits’ section of our website. You will also need either a Still to distil your alcohol from a spirit wash (highly recommended), or you will need a high alcohol kit, which can both be found in the ‘Spirits’ section of our website. There are two choices of stills on our website, the AirStill and the T500.
For a port with a twist, try this New York Sour recipe:
New York Sour
2 ounces bourbon
3/4 ounce lemon juice
3/4 ounce simple syrup
2 dashes peach bitters (optional)
4 bar spoons port
Add bourbon, lemon juice, simple syrup and bitters to a cocktail shaker with ice and shake. Strain into rocks glass with ice. Float port atop.
