Harris Vinkwik Re-Start Yeast
Vinkwik holds a reputable and trusted position in the home winemaking industry. Harris Homecraft updated it by incorporating one of the finest premium yeasts. It has a high tolerance to ethanol, making it the perfect choice when trying to re-start a stuck fermentation.
Temperature range
Although the yeast will perform best in the temperatures of 20-24C (68-75F), this strain is capable of fermenting between 10-35C (50-95F).
Directions
While you can sprinkle this yeast directly on the surface and stir it in, we recommend creating a yeast starter first. This is easy to do. Take half cup of tepid water at 30C, add 1 teaspoon of sugar and the yeast. Whisk and leave for 15 minutes. You should see a foam on the water indicating fermentation is taking place and there is a healthy colony of live yeast in the cup. Add this to the stuck wine and try to keep the wine warm at 20-24C.
Tips
For a stuck wine with a lot of alcohol or an extremely sweet wine, we recommend a staged addition. Make a yeast starter mentioned above. Add this yeast starter to 1 litre of the stuck wine and leave it in a warm place (20-22C). Once fermentation has started, add a further 1 litre of stuck wine. Keep adding the stuck wine in stages, as this will prevent yeast shock.
Always use a premium wine yeast when making wine to avoid stuck fermentations.
