30g Potassium Sorbate – Yeast Stopper
Purpose
Potassium sorbate plays a crucial role in winemaking as a stabilizing agent. When added to wine, it inhibits the growth of yeast and prevents fermentation from restarting. This is particularly important during the bottling process, as it ensures that the wine remains stable and doesn’t undergo further fermentation in the bottle. By preventing the formation of additional carbon dioxide, potassium sorbate helps maintain the wine’s desired flavor, clarity, and quality over time.
Add Potassium Sorbate After Clearing: Before sweetening your wine, ensure that it has completely cleared by allowing enough time for yeast cells to settle out. Rack the wine off these yeast cells to minimize the chance of re-fermentation.
You can add potassium sorbate on the day of bottling, but it’s even better to add it 7 to 10 days before bottling to allow sufficient time for its effect.
Sweetening and Potassium Sorbate:
If you plan to add sugar to sweeten the wine, make sure the wine is fully clear before doing so.
Whether you add the sweetener before or after potassium sorbate doesn’t matter. However, ensure that the wine is yeast-free before sweetening.
Filtering:
Recommended: I strongly recommend filtering the wine before back-sweetening and adding potassium sorbate. Filtering helps remove more yeast cells, making the potassium sorbate more effective.
Dosage:
The typical dosage of potassium sorbate is 0.2 to 0.6 grams per gallon of wine. This translates to approximately 0.05 to 0.16 ounces of powder or 1 to 4 drops of liquid per gallon.
Weigh the appropriate amount based on your specific wine volume.
Dissolving and Mixing:
Dissolve the potassium sorbate in a small amount of warm water or wine. This ensures even distribution throughout the wine.
Add the dissolved potassium sorbate to the wine and stir gently to mix it in.
