It is a low foaming premium cider yeast with a high sulphur dioxide tolerance, so fermentation will start even if there are traces of SO2 in the must. This strain of yeast tolerates high levels of other stress factors such as organic acids, incorrect temperature and incorrect acid levels.
What is the best temperature for the yeast?
Although the yeast will perform best in the temperatures of 20-24C (68-75F), it is capable of fermenting between 10-35C (50-95F).
Can I use a wine yeast in cider?
Yes, you can use a wine yeast in cider. Good yeasts to use are the Harris Premium Wine Yeast and Lalvin EC-1118. However, these yeasts are specifically designed for wine fermentation. You will get much better results if you use a dedicated cider yeast when making cider.
Is it best to make a yeast starter?
There is no need to make a yeast starter with the Harris Premium Cider Yeast. The yeast is strong and can start in conditions that make other yeasts struggle. However, making a starter ensures the yeast is active when you add it to the wine must.
