Everything you need to brew a superb Weiss Bier is included in the box (except water).  Festival German Weiss has a deliciously smooth and full-bodied bubble gum flavour, with a delicate and lingering clove-like aftertaste, with hints of bananas. The beer is a dark straw colour with a white head.  This Festival beer kit provides a dark straw finish with a white head

Festival provide a 150g sachet of priming sugar to ensure proper conditioning of bottles or barrels.

Hop bitterness of the German Weiss is 1.5 (on a scale of 1-5). The kit produces a target alcohol content of 4.8% ABV (approx)

What is a Weiss Bier?

Weißbier translates to “white beer”, but the name is derived from Weizenbier, meaning “wheat beer”. Weißbier is a beer (traditionally from Bavaria), in which a significant proportion of malted barley is replaced with malted wheat. By German law, Weißbiers brewed in Germany must be fermented using a “top-fermenting” yeast, which is technically an “ale yeast”. Specialized strains of yeast are used which produce overtones of banana and clove as by-products of fermentation.

The style is particularly noted for its low hop bitterness (about 15 IBUs) and relatively high carbonation, considered important to balance the beer’s relatively malty sweetness. It has a  phenolic character, the result of fermentation by top-fermenting yeast appropriate for the style. This has been described as “clove” or “medicinal” (“Band-aid”) but also smoky. Other more typical but less assertive flavour notes produced by Weißbier yeast include “banana” “bubble gum”, and sometimes “vanilla”. Weißbier is a different style to Witbier, which originates from Belgium.

WHAT EQUIPMENT DO YOU NEED?

Basic beer making equipment (5g fermenter, airlock, syphon tube with sediment trap, hydrometer, Suresan sanitiser, bottles or barrel). These are available under the starter kit section on this website.

Food Pairing

Cheese is a perfect match for this style’s fruit and clove-like flavours with creamier, almost buttery cheeses like Edam, herbed goat cheese, or soft cheese. Cured sausages and smoked hams also pair well with Weiss Bier.
