What is a Weiss Bier?
Weißbier translates as “white beer”, but brewers derive the name from Weizenbier, meaning wheat beer. Bavaria traditionally produces Weißbier as a German wheat beer style. Brewers replace a significant portion of malted barley with malted wheat.
German law requires Weißbier to use top-fermenting ale yeast. This yeast produces distinctive fermentation flavours and aromas. It creates banana and clove notes as natural by-products of fermentation.
Weißbier delivers low hop bitterness, typically around 15 IBUs. High carbonation balances the beer’s malty sweetness and enhances refreshment. The yeast produces a phenolic character often described as clove-like or spicy. Some drinkers also detect smoky or medicinal notes in the flavour.
In addition, the yeast can produce banana, bubble gum, and vanilla flavours. These characteristics define the classic Weißbier flavour profile. Weißbier differs clearly from Belgian Witbier in both ingredients and origin.

Basic beer making equipment (5g fermenter, airlock, syphon tube with sediment trap, hydrometer, Suresan sanitiser, bottles or barrel). These are available under the starter kit section on this website.
Food Pairing
Cheese is a perfect match for this style’s fruit and clove-like flavours with creamier, almost buttery cheeses like Edam, herbed goat cheese, or soft cheese. Cured sausages and smoked hams also pair well with Weiss Bier.

Without doubt the best wheat beer kit I have used. The colour is relatively dark for a “heffeweisse” but delicious flavour of clove and a hint of banana. Best served eally cold on a hot summer day in the sort of “vase” type glass you would get in Germany.
An absolutely tremendous wheat beer. With an addition of 1kg wheat spraymalt it is an equal to Franziskaner Royal. This is now my go to.
