Cardamom Pods – 25g

Very little cardamom is needed to give the gin its strong, resinous and slightly cooling flavor, familiar to anyone who has had chai tea. The green cardamom seeds also give an additional eucalyptol flavour to gins.

The small black seeds inside the pod give the flavour, and because they impart a strong taste, only one or two pods are needed.

An increasing number of gin makers now add cardamom pods to their gin recipe.
