Tartaric Acid is the main acid present in ripe grapes and it plays a vital part in the maturing of wines. It reducees the pH value and provide tartness.
Description
Tartaric Acid
Tartaric Acid occurs naturally in fruits, especially grapes. It is used in the wine industry to reduce the pH value and provide tartness and helps to control the acidity
of the wine and is considered as one of the strongest acids in wine. It also plays a crucial role in enhancing the taste, feel, and colour of wines.
If only tartaric acid is used, it will cause a slow fermentation. It can impart a harsh taste in young wine but is invaluable during maturation as it readily participates in esterification.
Chilling wine with excess tartaric acid will cause precipitation of cream of tartar as the acid is less soluble in alcohol. This is useful in reducing the acidity of a too acid wine.
Tartaric acid is one of the most important acids in winemaking because it helps give wine structure, balance, and stability. It is naturally present in grapes, but winemakers often add extra tartaric acid to adjust acidity and improve the wine’s overall quality.
Why Winemakers Use Tartaric Acid
1. Balances Flavours
Tartaric acid adds bright, crisp acidity, which balances sweetness and alcohol. This helps the wine taste fresh, lively, and well-rounded.
2. Stabilizes the Wine
Tartaric acid helps prevent chemical changes in wine over time, including unwanted spoilage or bacterial growth. It also helps maintain the wine’s pH within a safe, stable range.
3. Enhances Colour and Mouthfeel
In red wines, tartaric acid helps preserve colour and gives the wine a firm, structured mouthfeel. In white wines, it enhances crispness and freshness.
4. Corrects Low-Acid Wines
Some fruit wines or grapes from warmer climates naturally have low acidity, making the wine taste flat. Adding tartaric acid restores proper acidity and improves overall balance.
5. Works Well With Other Acids
Tartaric acid is often used alongside citric acid or malic acid to mimic natural grape acidity and create a well-rounded wine profile.
