Mace is mild and sweet, with a hint of citrus, cinnamon, black pepper and pine. It’s more delicate than nutmeg, and that’s why it’s commonly used in pastries, fish dishes, soups and casseroles.  Mace is also a common baking spice most commonly found in doughnuts, cakes, and cookies. Like nutmeg, you can also use mace in savory dishes like eggs, sausage, stuffing, or veal. Though they’re not the same, mace does pair well with the same spices as nutmeg.
